Once Upon A Nerdy Eater

Slow Cooker Quorn, Veg & Bean Stew.

Hi guys,

Wanted to share this recipe with you. We’re super pleased with how this has worked out and for the price and number of servings, you cannot beat it 🙂 We literally decided to just chuck some veg that was in the fridge into the slow cooker, add beans and some pasta to bulk it out.

Quorn, Veg & Bean Stew

Serves 10 & fits a 6.5 litre slow cooker.

6 Quorn fillets (cut into small/medium chunks)
220g carrots (cut into small/medium chunks)
150g celery (cut into small/medium chunks)
100g onion (diced)
400g tinned chopped tomatoes
2 litres hot water
2 vegetable stock cubes
400g haricot beans (although mixed beans would also work)
250g pasta shapes
100g mushrooms (cut into small/medium chunks)

1) Add all the ingredients to the slow cooker and cook on low for 8 hours.

That’s it 🙂 I love one pot meals, and I love meals I can put on in the morning before work and then come home to dinner 🙂

So here come the stats:

Price for whole dish: £4.62

Price per serving: £0.46
Calories: 179
Fat: 5g
Carb: 35g
Protein: 11g

Hope you guys like. Let me know if you give it a go.

Cheers for now 🙂

I love quorn but it’s so darned expensive here! This looks so yummy!

It’s about £1.99 per 300g here which is pretty good. Works out cheaper than most meat tbh.

Crazy! Here I’ve only found it at Whole Foods, ~$7 for 2 small filets. Definitely cheaper to buy chicken!

That really is crazy prices. Yeah I’d buy chicken if the price was that high. Am currently in shock overit tbh.
